Don't knock catfish Noel, it's very popular here in the south, and rightly so. The fillets are white and about the size of plaice fillets and taste delicious. Crawfish are back in season, I had my first lot last week, we eat them cold with crunchy French bread, small spicy boiled potatoes and a cold beer or two, absolutely delicious. One of my favourites is a fried catfish fillet [as in fish and chips] smothered with crawfish etouffe- it does'nt get any better.
